Sybil’s Butter Chicken With Mushrooms

Ingredients

  • 4 Chicken Breasts cut into 1” cubes
  • 2 Medium onions
  • 3 Tbsp butter
  • 2 cups Crushed Tomatoes
  • 1-3Tbsp Sybil’s Butter Chicken Curry
  • 2 cups chicken broth/stock
  • 1-3 tsp sugar
  • 8 oz Cremini or Button Mushroom

Method

  1. Apply Sybil’s 1 Tbsp Butter Chicken Curry Paste to chicken cubes & stir fry or BBQ (optional).
  2. In a pot sauté onions in butter till translucent.
  3. Add Crushed Tomatoes, 1-2Tbsp Sybil’s Butter Chicken Curry Paste & sauté for 5 minutes.
  4. Puree.
  5. Return to pot; add chicken, 2 cups chicken broth and sugar.
  6. Bring to a boil & then simmer till done.
  7. Lastly add ½ cup or more whipping cream or coconut milk for a nice rich colour.
  8. Add mushrooms.
  9. Simmer for 5 minutes.
  10. Add sugar and salt to taste & broth for the desired consistency.

Step 1 is optional and can be skipped to save time.
