Sybil’s Mom’s Pistachios Crusted Shrimp

Preparation time: 10 – 15 mins
Marination time: 15 mins or longer
Cook time: 3 – 4 mins
Serves: 4

Ingredients

  • 1 lb deveined Tiger Shrimps
  • 1 – 2 Tbsp ‘Sybil’s Mom’s Curry Paste’
  • 1/2 cup ground pistachios
  • 3 Tbsp all-purpose flour
  • 2 Tbsp finely chopped fresh mint
  • 1/4 tsp salt
  • 2-4 Tbsp vegetable oil
  • 1 lemon, cut into wedges

Method

  1. Apply ‘Sybil’s Mom Curry Paste’, mint and salt to the shrimps. Set side for 15 to 30 minutes.
  2. Stir together pistachios, flour, salt.
  3. Dip each shrimp in pistachios mixture; lay on a baking sheet until ready to cook.
  4. Heat 1 tablespoon oil in a large skillet; grill shrimp in batches on medium heat, cooking 3 to 4 minutes, turning once. Use remaining oil as necessary.
  5. Serve shrimp immediately, accompanied by lemon wedges.
