Sybil’s Cauliflower with Chickpea Curry

  • 1 lb cauliflower cut into florets
  • 19 oz chick peas tin drained and washed
  • 1 large onion finely chopped
  • 1 medium tomato finely chopped
  • 1 Tbsp Sybil’s Madras Curry Paste
  • Sugar and Salt to taste


  1. Add oil to a saucepan, when hot add the onions and sauté on medium till translucent and cooked.
  2. Add ½ the tomatoes and cook till pulpy.
  3. Add cauliflower and sauté till aromatic.
  4. Add Sybil’s Madras Curry Paste and sauté for a couple of minutes.
  5. Add chick peas, ¼ cup water, salt and sugar to taste and cook till done.
  6. Lastly add the balance tomatoes, stir in.
  7. Season to taste and serve.
